  • 1/2 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 pounds beef for stew, cut into 1-inch pieces
  • 2 cans (16 ounces) diced tomatoes, undrained
  • 6 red potatoes, peeled and diced
  • 1 pound smoked sausage, sliced
  • 1 cup chopped onion
  • 1 cup chopped leek (optional)
  • 4 ribs celery, sliced
  • 1 cup chicken broth
  • 6 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 3 tablespoons water
  • 2 tablespoons of all-purpose flour


  1. Combine beef in with flour, salt, and pepper in a zip lock bag and shake to evenly coat the meat
  2. Combine all ingredients except 3 tablespoons of water and 2 tablespoons of flour in 12 in deep or 14 in Dutch Oven
  3. Bake at 350 degrees for 1 hour
  4. Mix 3 tablespoons of water and 2 tablespoons of flour in a small bowl and then mix into stew
  5. Bake for an additional 30 minutes


Pre-trip Prep: • Cut up meat and put in zip lock bags – keep cold • Cut up onion, leeks and celery and put in zip lock bag – keep cold • Combine flour, salt, and pepper and put in large zip lock bag • Combine dry spices and put in zip lock bag • Put extra flout in a zip lock bag
